Terroir : The parcels are located on the commune of Saint Michel de Rieufret on a hillock of deep gravel where Cabernet Sauvignon performs best. This vineyard is isolated right in the centre of a forest of oak trees and pine trees.
Grape variety : 80% Cabernet Sauvignon & 20% Merlot.
Harvesting : Meticulous at best maturity.
Winemaking : This cuvée comes from selected parcels. After the alcoholic fermentation in thermo-regulated tanks, the wine is pumped from the tanks after 15 to 20 days, before the malolactic fermentation. Agapes are aged in new oak barrels for a year.
Production : 6 000 bouteilles.
Tasting : With a deep robe the nose is delicately fruity with notes of undergrowth and sweet chesnut. The aromas of wild fruits, liquorice and spicy notes give depth to the palate. This wine has an ample concentration with a structure and a long finish with an elegant note of wood.
Food pairing : This wine will be drunk with dishes of grilled meats, lamb chops, game meat. It is superb on an assortment of all sorts of cheeses.
