AOC GRAVES

Terroir : The parcels are located on the commune of Saint Michel de Rieufret on a hillock of deep gravel where Cabernet Sauvignon performs best. The parcel is isolated right in the centre of a forest of oak trees and pine trees.

Grape variety : 60% Cabernet Sauvignon, 37% Merlot & 3% Petit Verdot.

Harvesting : Meticulous when at perfect maturity.

Winemaking : After an alcoholic fermentation in thermo-regulated tanks between 22°C and 24°C for the best extraction of the aromas, the best colour and the best tannins, the wine is then pumped from the tanks before the malolactic fermentation.

Production : 40 000 bottles.

Tasting notes : With a dark ruby robe this wine opens on an intensive fruity nose with spicy notes characteristic of the fine Cabernet Sauvignon when perfectly ripe. The tannins are soft and delicate on the palate. The structure is complex with notes of wild fruits with a balanced finish.

Food pairing : This wine will be appreciated as an aperitif with slates of delicatessen and cheeses. This charming wine will also accompany summer vegetables topped with cheese, lamb, barbecued grilled meats or a nice piece of beef.
